Put all of the ingredients out on the counter before you start.  Then as you use each ingredient, put it away.  If you have anything left over, you've left it out.  It may be the type of ingredient you can still add.

Use shiny cookie sheets.  Dark ones absorb heat redialy and cookies may burn on the bottom.

This month I’m sharing some favorite recipes from my Christmas cookbook, “Granny’s Taste of Christmas” (to purchase, see our home page). There are 293 scrumptious recipes, including 61 southern Christmas cakes!  Scattered throughout are old fashioned “sing-along” Christmas carols. A real keep-sake and great Christmas gift!

 

1950’s Icebox Fruitcake

Almost like candy. Wrap tightly and serve to drop-in holiday guests.

 

1       16-oz. pkg. mini marshmallows

1    5-oz. can evaporated milk

1    14.4-oz. box graham crackers

1   6-oz. bottle red maraschino cherries, cut up

1    6-oz. bottle green maraschino cherries, cut up

1   7-oz. pkg. flaked coconut

1    quart pecan halves

 

Melt marshmallows in evaporated milk in saucepan, stirring constantly till smooth. Crush entire box of graham crackers.  In a very large bowl, mix cracker crumbs and melted marshmallows together. Add cherries, coconut and pecans.  Mix thoroughly with hands and pat firmly into a well buttered 10-inch tube cake pan. Chill thoroughly. Turn out onto a cake plate. To serve, cut in thin slices because it’s very rich.  It will keep all through the holidays. Wrap tightly and refrigerate between servings.

 

Note:1 box of graham squares = 4 cups of crumbs (if you want to buy the box of graham cracker crumbs instead of crushing the whole ones)

 

Meg’s Sugar Cookies

A delicious easy sugar cookie, unlike most sugar cookie recipes, this dough does not have to chill before rolling out.

 

2/3  cup shortening

  cups sugar

2   large eggs

2   tsp. vanilla

2-1/2 to 2-3/4 cups all purpose flour

½  tsp. salt

2        tsp. baking powder

 

Preheat oven to 350 degrees. Cream shortening and sugar; add eggs and vanilla, beating well.  Sift flour, salt and baking powder together; add to creamed mixture.  Roll out on lightly floured surface and cut into desired shapes.  Bake on ungreased cookie sheet for 10 minutes. Remove immediately or they will stick.  For tiny mini-size cookies, bake for 8 minutes.

 

Lemon Cake Mix Cookies

A favorite that grandchildren like to make. Any flavor of cake mix can be used.

 

1     18.25-oz pkg. Duncan Hines Lemon Cake Mix

  cups Cool Whip

1      large egg

½     cup powdered sugar

 

Preheat oven to 350 degrees.  Combine cake mix, Cool Whip and egg, beating with a spoon until well mixed.  Roll into small balls and drop into powdered sugar, coating well.  Place on greased baking sheet 2 inches apart and bake for 10 to 12 minutes.    Makes about 5 to 6 dozen
