Do not store sweet potatoes in fridge.

It causes changes in the starch componant and  alters the taste.

 

We’re always looking for simple and easy dinner recipes! In reaching back to the 1980’s, we re-discovered one of our favorites:

Pepper Steak

 

 Why a favorite? Because it’s delicious, easy to make and doesn’t require a lot of preparation, and uses a crockpot!!!  Colorful, with red, green and yellow bell peppers and served on a bed of fluffy white rice, this month we’re sharing one of our old favorites: 

Bon Appetite!!!

Pepper Steak

 

1½ London Broil steak, cut into thin slices

1 medium size green bell pepper, cut in thick strips

1 medium size red bell pepper, cut in thick strips

1 medium size yellow bell pepper, cut in thick strips

1 medium Vidalia Sweet onion, sliced

3 Tbsp. cup soy sauce

¼ tsp. each: garlic powder, ground ginger & black pepper

½ tsp. salt

1 Tbsp. light brown sugar

1½ cups beef stock (not beef broth)

2 Tbsp. corn starch, dissolved in 2 Tbsp. cold water

Hot cooked white rice (we like Uncle Ben’s)

Stock Mixture: Combine the beef stock, soy sauce, garlic powder, ground ginger, black pepper, salt and light brown sugar in a small saucepan. Bring to a boil and add the corn starch mixture and blend. Remove from heat and pour over meat as directed below.
In a 5 qt. crockpot, place the meat slices, pour the beef stock mixture over the meat and top with the sliced onions. Cook on high for 3 hrs. (meat should be “fork-tender”) Now add the sliced bell peppers and continue to cook on low for 20 minutes. Remove to serving bowl.
Note:  Add some rolls, a wedge of lettuce with store-bought blue cheese dressing on top and a delicious dessert from our index and you have a fabulous meal !!!
